Spicy Potato Chips



Ingredients:
Potatoes-2
Chilli powder-2 tsp
Salt-1 tsp
Oil for deep frying

To prevent oxidation:
kosher Salt-1 tbsp
Lemon juice-1 tbsp

Method:
1)Dry mix chilli powder and salt in a separate container and keep it aside.
2)Peel the potatoes and thinly slice them using a mandolin slicer.
3)Once sliced put them immediately in water.Wash them well in water.
4)Put them in warm water and add kosher salt,lemon juice and let them stay for 5 mins.
5)This step prevents the potato from getting browned.
6)Wipe the slices well to remove extra moisture before frying.
7)Deep fry them in small batches.Don't overcrowd them because the chips wouldnot turn crispy.
8)Drain excess oil and remove the chips in a separate plate.
9)Coat the chips evenly with the dry mix and let it sit for 5 mins.
10)Spicy potato chips is ready to be served.
